Arrós melós amb llampuga (Rice stew with mahi mahi)
Tolo Llinares, the soul of Gastro Molí restaurant in Finestrat, has an exquisite recipe for arròs melós amb llampuga. It is a traditional local dish, which is cooked from the end of September to the beginning of November, during mahi mahi fishing season.
Ingredients:
* ½ kg of mahi mahi
* ½ red pepper
* 100 g pumpkin
* 100 g beans
* 20 g onion
* 50 g chopped tomatoes
* 1 tsp ñora pepper
* a few strands of saffron
* 125 g rice
* 250 g water
* salt to taste
* olive oil
Preparation:
Pour the olive oil into a cast iron casserole dish, heat it, fry the red peppers and remove them. Sear the mahi mahi and remove it. Next, add the chopped pumpkin and beans, then add the chopped onion for the last three minutes so that they don’t burn. Add the chopped tomatoes, the ñora pepper and saffron. When it is ready, add the rice, fry a little and add the water. Leave to cook for 20 minutes. Finally, add the peppers and the mahi mahi and cook for a further three minutes.
